We don’t do trips very often but when we do, they are always special. This one was extra special because of a special natural phenomenon that doesn’t happen very often. A total solar eclipse was happening in 6 places around the USA. A solar eclipse is when earth, the sun, and the moon all are in a perfect line. The moon will block out the sun partially and totally and you can see partial all around the United States. But in those six places I mentioned you can see a total eclipse which is where the moon completely blocks out the sun. We were going to Kansas City to see this incredible opportunity and me and my brother got to do this with my uncle, my aunt and my cousin Raeya. Check out this photo of our shadows during the eclipse. Doesn’t it look like art?
In Kansas City we also went to an amusement park called Worlds of Fun and a Kansas City Royals games against the Cleveland Indians. All of these activities were fun!
At the Royals game I got a tour of the stadium and learned about the gluten free and dairy free options they had and of course I got excited to eat nachos! The lady Janae that took us on the tour was really nice. She gave us a gift bag including all kinds of things like player bobbleheads, a hat, a ball, and baseball cards. We split them all up and shared these items. She also gave everyone frozen lemonade and my brother really liked it. And at the end of the game they did fireworks which was super cool! Thanks Kauffman Stadium for an awesome experience!
One of my biggest blog followers, Pam Kingsley, offered for our family to stay at her house, which was very kind of her. She also picked up a lot of GF options for us to eat, which was also very nice of her. One of her options was the Daiya Mac and Cheese, which is the product I am going to review today.
Daiya makes a product that we eat probably more frequently than any other product. Their vegan cheese is a perfect substitute for dishes we eat that have cheese in them. This cheese in the mac n’ cheese that Daiya made tasted a lot like the cheese they make. It was even better than the cheese just straight in the package.
On the side of the bowl of the mac n’ cheese I had a delicious glass of lemonade and a bunch of olives. I mixed the olives in my bowl of mac n’ cheese. The cheese and the olives made a great combination along with the noodles. The lemonade was a sweet refresh after the savory olives and the cheesy noodles with cheese. All in all, it was a spectacular dish and it left me smiling for a long time. I would definitely recommend this meal to a dairy free and/or gluten free person. It would leave you smiling too.

The vegan, gluten-free products were enjoyed by all. Non-vegan, gluten lovers like Ellen loved the Udi bagels and my sister (Kathleen) became an instant fan of Figgy Pops — which I bought after reading your review a few months ago!
