Gluten free and dairy free gnocchi? Yup. I mean where have you heard that before? Dairy free and gluten free gnocchi is so rare and it’s so good too. My mom saw it at the store the other day and I was very excited to try it.
If you don’t know much about gnocchi because you just don’t or because you have allergies and can’t find anything like this that you can actually eat, I will tell you about gnocchi. Gnocchi are little potato things that look a bit like dumplings. We put them in tomato sauce but you can put them in any sauce. Gnocchi is/are various thick, small, and soft dough dumplings that may be made from semolina, regular wheat flour, egg, cheese, potato, breadcrumbs, cornmeal, or similar ingredients, with or without flavorings of herbs or other things. You could take the cheese and replace it with vegan cheese and or take out the breadcrumbs if you are gluten free and use gluten free flour. But in our case we found a brand that makes it without any of that stuff in there so we just ate it the way it was. If you are vegan you should note that these have eggs in them.
The brand who makes this gnocchi is called Cappello’s. This product is gluten free, grain free and paleo friendly. The ingredients of this gnocchi by Cappello’s are also healthy with six grams of protein and a ton of iron and Vitamin C in it!
Even though there is no butter in these gnocchi they tasted almost buttery to me. Plus then they were in a tomato sauce with a bit of a garlic flavor and all together this totally hit the spot. I had that with garlic kale on the side. All in all it was spectacular and I would definitely eat it again! A bonus to gnocchi is that it is really filling. You don’t need a lot to make you feel full. Some people might not like that but I do.
Since I’m sharing something that made me happy, I want to share something else that made me very happy that you might be interested to hear about.
My basketball team won the championship! It was the first time I have ever won a championship in any sport! I made seven points on two twos and one three in that game. We beat the other team 32-15. Here is a video of my basket:
